Cuts in the Chef Ready program are weight ranged to higher standards. Other programs often weigh by the pack, so you can get a large cut and a small cut together. Each and every Chef Ready piece is hand weighed. If that piece is off weight, it’s out of the program.

In addition to racks, the program also includes weight-ranged bone-in legs, striploins, and shanks. The result is top notch lamb that is easier to cost, portion, and serve.
